Slow Cooker Tender Chuck Roast (or Short Ribs)

Experience the ultimate comfort food with this slow cooker tender chuck roast or short ribs, where tough cuts transform into melt-in-your-mouth perfection. Serve it with creamy mashed potatoes to savor every drop of the rich, flavorful gravy.

Ingredients

  • 1 Tbsp olive oil
  • 4 meaty beef short ribs OR large chuck roast
  • 1 onion, roughly chopped
  • 5 cloves of garlic, minced
  • 1 cup of red wine
  • 2 3/4 beef stock
  • 1 tsp dried thyme
  • 1 Tbsp tomato paste
  • 1 tsp sugar
  • 2 bay leaves
  • Salt
  • Pepper
  • Garlic powder
  • 1 Tbsp Worcestershire sauce

Directions

  • Heat oil in a large frying pan on high. Season the meat liberally with salt, pepper, and garlic powder, and brown on all sides in the pan.
  • Remove the meat from the pan and place in the slow cooker.
  • Turn heat down to medium-high and add onion, with a bit more oil if needed. Cook for two minutes while stirring, then add minced garlic and cook for another minute until fragrant.
  • Add wine and bring to a bubble. Let simmer for 3-4 minutes, then add beef stock, thyme, tomato paste, sugar, bay leaves, and Worcestershire sauce.
  • Stir together and bring to a simmer, then transfer to the crockpot. Place the lid on and cook on low for 6-8 hours.
  • Serve over garlic mashed potatoes and enjoy!
